CSA Greens Recipe
In celebration of National Farmer's Market Week - we are posting a recipe from Newark CSA member, Eric. Answering the question, What can I do with all those greens this week?
Here's Eric's Easy Greens Recipe:
- Sautee garlic in olive oil till garlic is light brown.
- Add stock, (we usually make veggie or chicken stock every few weeks to have it on hand) this lowers the temperature of the oil so the garlic doesn't burn.
- Then simply add CSA veggies and cover until ready.
- We like al dente veggies so we only steam for 7-10 min.
It's great for anything!
Pictured is a rainbow chard, bok choy, and spinach.
We usually make a side of pasta and combine it together for a full meal.
